As we continue to spend more time staying in this year, a fun and tasty pastime quickly found its way into our homes — baking. Said to be a stress reliever, it is a way to creatively express oneself and spend quality time with friends and family through the baking process, sharing the delicious bites together or both (online or offline).

Ready to shake off a bit of that stress and indulge in something that’s easy and cute to boot? Here’s a fail proof madeleine recipe from OKAIMONO.

Ingredients (Makes six madeleines)
30g powdered sugar
30g cake flour
30g French butter (melted)
1/4 tsp baking powder
1/3 egg (medium-sized)
1 tsp milk
Orange zest (from 1/2 to 1 orange, depending on the size of the orange and your preference)
A pinch of salt

Preheat the oven to 180 degrees Celsius (or 350 Fahrenheit). Grease the mould and set it aside. Put sugar, salt, egg, milk and orange zest into a mixing bowl and whisk them together. In a separate bowl, sift the cake flour and baking powder, then mix them gently until well combined.

Pour the powder mixture into the first bowl and stir until the texture is creamy. Add in 1/3 of the melted butter at a time and beat until ribbons form in the bowl when you lift the whisk. Pour the batter into a piping bag and pipe the mixture into the pre-greased mould until each mould is about two-thirds full. If you do not have a piping bag, simply spoon the mixture into the mould.

Bake at 180 degrees Celsius for about 12 to 15 minutes. Make it a point to check on the madeleines at the 12th minute to see if they are ready because baking time differs from oven to oven. If the madeleines have fully risen and the sides have begun to turn a delicious brown, they are ready!

To remove the madeleines from the Rabbit and Bear silicone mould successfully, turn the mould upside down and gently push the mould from the back. Set the madeleines on a rack to cool. If you so desire, use chocolate pens or icing to decorate and level up the cuteness of these (admittedly already adorable) rabbit and bear madeleines.
